Aquafaba is the liquid from a can of chickpeas. Normally, it would head straight down the sink leaving you with just the chickpeas to play with. However, there is certainly some fun to be had by hanging on to that liquid.
Aquafaba has revolutionized vegan cooking and baking by acting, rather convincingly, like egg white. It was found that when whipped, aquafaba foamed and eventually stiffened much like egg white, meaning that suddenly vegan meringues, mousses, and other such poofy desserts were a possibility.
Here at OGP, there are tons of delicious recipes for you to try that rely on the old aquafaba for fluff and fun.
1. Pavlova With Coconut Whipped Cream
This Pavlova With Coconut Whipped Cream by Sara Oliveira is a stunning work of art. Perfectly crispy meringue and fluffy whipped cream come together to form a classic and elegant dessert. Disks of meringue are sandwiched together with the cream and decorated with plump, fresh berries.
2. 3-Ingredient Cotton Candy Strawberry Ice Cream
You mustn’t miss this 3-Ingredient Cotton Candy Strawberry Ice Cream by Philipp Ertl. With just aquafaba, icing sugar, and some strawberries, you can have the lightest ever ice cream. The aquafaba gives the fluffy, cotton candy-like lightness to the ice cream. Enjoy it straight from the freezer.
3. Chocolate Mousse with Aquafaba
Try this light and heavenly Chocolate Mousse with Aquafaba by Maggie Wescott. It is light and fluffy and oh so chocolaty—everything you could want in a mousse. The mousse is made with real chocolate chips and is served with a huge dollop of coconut whipped cream. A few shavings of dark chocolate for a garnish wouldn’t go amiss, either.
4. Fluffernutter Sandwich Cookies
These Fluffernutter Sandwich Cookies by Amy Lyons are so much fun. Two peanut butter cookies are sandwiched together with homemade aquafaba marshmallow fluff. The slight saltiness of the cookies and the sweetness of the fluff are the perfect partners in these extra-special cookies.
5. Lemon Tarts
If you are looking for an elegant dessert to serve to your guests, try making these Lemon Tarts by Lena Novak. Though healthier than traditional lemon tarts, these vegan tarts lack none of the flavors. The crusts are made from ground almonds, sunflower seeds, and quinoa, making them protein-rich. The crusts are then filled with lemon custard and topped off with a light meringue.
6. S’mores Baked Alaska
These S’mores Baked Alaska by Hannah Kaminsky are super fun to make and are their own little miracle. A scoop of chocolate ice cream sits upon a sturdy graham cracker base. Then, the ice cream is completely engulfed in aquafaba meringue. This is then blasted with a kitchen torch or put in the broiler until golden. Amazingly, the ice cream stays cool and calm under all that insulative meringue. Have yourself an indoor s’mores party.
7. Healthy, Moist & Melt-In-Your-Mouth Chocolate Cake
It’s the aquafaba that helps to give this Healthy, Moist & Melt-In-Your-Mouth Chocolate Cake by Julie Zimmer its lift. This is as rich and chocolaty a cake you could wish for and is sweetened primarily by ripe bananas and just a little maple syrup.
8. Easy Vegan Tiramisu with Panettone
This Easy Vegan Tiramisu with Panettone by Angie Li is just divine. Homemade vegan mascarpone cheese is layered between coffee-soaked vegan panettone. The dessert is then topped with cacao nibs and dark chocolate shavings. This is a great no-bake dessert that will impress friends. Serve chilled.
9. French Yogurt Cake with Strawberries and Cream
Have a go at making this picturesque French Yogurt Cake with Strawberries and Cream by Julie Zimmer. The cake itself contains whipped aquafaba helping to make it light and moist. Serve a slice of this delicious cake on a summer’s day or make one as a birthday cake for a lucky friend.
10. Kamut Ravioli with Almond Ricotta & Spinach in Marinara
This is just to show that aquafaba is useful in savory dishes, as well. Try making these Kamut Ravioli with Almond Ricotta & Spinach in Marinara by Lena Novak, and your dinner guests will be pretty impressed. You will make the ravioli dough from Kamut (Khorasan wheat) flour, an ancient grain, and aquafaba. Fill your ravioli parcels with homemade vegan ricotta and spinach and cover them in a rich marinara sauce. Quite a feat, but well worth it.
