Fregola is small spheric pasta made by hand from semolina. This is traditional from Sardinia and it’s traditionally served with fresh clams and grated bottarga. This version of Fregola Sarda with Snap Peas by Alice Carbone Tench has a beautiful texture thanks to the chewiness of the fregola and to the crunchiness of the slightly cooked snap peas.
8. The Best Vegan Ribs

These vegan ribs are a showstopper. I made these ribs for one of my closest, pickiest friends. She is someone that will tell you the real, really quickly. Not to my surprise, she absolutely loved these ribs! And for that reason, they are absolutely the meal to bring to any vegan skeptic because they are mind-blowingly flavorful and “meaty.” I also strongly suggest this recipe to anyone struggling during a vegan transition. This marinade is one of my all-time favorite combinations. The spicy mustard and the savory miso perfectly complement the earthy nuttiness of the tempeh. With tender stems and crispy leaves, the roasted bok choy is special in its own right. Squeeze fresh lemon juice over the top of this Miso-Mustard Tempeh with Roasted Baby Bok Choy by Lisa Dawn Angerame right before you are about to eat to bring out the best in every flavor. Altogether, this plate is not only healthy but pretty too! Serve with a nice little bowl of rice or quinoa for a complete meal.
