White potatoes are delicious and versatile. You can eat them mashed, boiled, fried, and roasted, and they make awesome snacks, such as chips and fries.
Potatoes are also really nutritious and packed with vitamins and minerals, especially if you eat them with the skin still attached. They are significantly high in vitamin C, folate (B9), B6, and potassium.
This is all to say that no one is bashing the humble spud, here. However, for those avoiding carbs for whatever reason, white potatoes might not be an ideal choice. But, never fear. There are lots of recipes that substitute the white spud with other delicious veggies, from turnips to sweet potatoes.
