Now that Ukraine is at war with Russia and facing an uncertain future, it’s more important than ever to preserve its cultural heritage. In recognition of the Ukrainian people’s brave defense of their proud nation, we bring you 12 recipes that will hopefully strengthen the connection with family tradition. 2. Potato Pancakes

These tasty Potato Pancakes by Olivia Andrews are inspired by Korean potato pancakes, which usually use potato starch, giving them a nice chewy, gelatinous texture. If you’re not so fond of the texture, you can use cornflour instead of potato starch, which is more widely available. I find equal parts of each is a happy medium.

Lentils and cabbage are two ingredients that may not be that exciting on their own but put them together and submerge them in a ridiculously flavorful tomato sauce? Amazing. These Lentil Stuffed Cabbage Rolls by Michael and Masa Ofei are hearty from the white rice and lentils, savory thanks to the sautéed onions, salt, and pepper, and super easy to make. Serve these warm on their own, with a side of mashed potatoes, or with bread for soaking up all of the tomatoey deliciousness.

Colomba di Pasqua: Italian Easter Sweet Bread traditionally made with flour, eggs, sugar, yeast, and butter. The dough is speckled with dried fruit and then fashioned into a dove shape (“colomba” in Italian) and then topped with sugar and slivered almonds before baking. This version by Pavani Nandula makes it possible without the eggs or dairy!
