Including chia pudding, energy bites, make-ahead smoothies and more!

Chances are you have already heard about the health benefits of chia seeds — ranging from reducing inflammation and lowering cholesterol to aiding in the prevention of certain cancers and keeping you regular. Two tablespoons of chia seeds pack about 10 grams of fiber and 5 grams of protein, plus omega-3 fatty acids, per the USDA. So yes, you can say these little seeds do a lot for you, nutritionally speaking.
These chia seed recipes prove that this healthy ingredient has a lot of culinary perks, too. With a mild, slightly nutty taste, chia seeds introduce fun textures to a dish without changing the flavor too much. Dry, tossed with oats or sprinkled onto a salad, the seeds will contribute crunch. When mixed with a liquid, though, that's when the real magic happens. Chia seeds absorb liquid and plump up into a pudding-like consistency. Combining chia seeds with muddled berries results in a naturally thickened (quick!) jam. Stirring a spoonful into overnight oats or oatmeal boosts the overall creaminess.
