If there is one cereal that today’s generation loves to have in their breakfast, it is the cornflakes. It has been used as a staple food in the west and now Indian culture is also adopting it. Most of us enjoy this cereal with cold/hot milk with some honey on top. But, what if we tell you that this ingredient can be used to make some other delicious savoury items as well? We have curated some amazing Indian dishes using this popular cereal and once you have a look at them, you would not want to use cornflakes the regular way. This is a very simple dessert recipe that you can make quickly for your guests and surprisingly, it is healthy too! All you need to do is take a large mixing bowl and add 1 cup of cornflakes with a little jiggery, 2-4 tbsp grated or shredded coconut, 100 gms ghee, 2-3 tbsp mixed dry fruits, and a little condensed milk. Mix well all the ingredients to make soft dough. Now, take a small portion from this dough and make small balls of this mixture. Take a plate and put the ball on the plate. Make more such balls and the laddoos are ready to consume.

To prepare this amazingly delicious kebab recipe, take a large bowl and add 2 boiled potatoes in it along with ½ cup boiled peas, 2 cups of cornflakes, 2 finely chopped green chillies, 2 tbsp corn flour, 1 tbsp rice flour, 2 tbsp all purpose flour, ¼ cup chopped coriander leaves, ½ tsp red chili powder, ¼ tsp garam masala powder, 2 pinches of chaat masala, and salt to taste. Combine together all the ingredients to make a soft dough-like mixture. Take some mixture in your hand and roll in the shape of a long kebab and put it on a greased plate. Meanwhile, heat some oil in a kadhai and make more kebabs. When the oil is hot enough, take a kebab and add into the kadhai and fry till golden brown in colour. You can also bake these kebabs at 180 degrees C in the oven for 5-7 minutes. Enjoy with tomato ketchup or as a side dish with your Dal Chaawal.

With this recipe, you can give a nice South Indian touch to cornflakes and everyone will love it for sure! To make this Upma recipe, put a kadhai over medium flame and heat a little oil in it. When the oil is hot enough, add asafoetida, curry leaves, mustard seeds, cumin seeds, some peanuts and chana dal in it. Saute for a few seconds and then add 1 small finely chopped onion with 2 slit green chillies. When the onion is translucent, add ½ cup chopped tomato in it. Next, add ½ tsp turmeric with a little black pepper powder, ¼ tsp red chilli powder and salt to taste, and stir well. Cook the mixture until soft and then add 2 cups of cornflakes in it. Add very little water so that the cornflakes become softer and cover the kadhai with a lid. Cook for 2-3 minutes. The trick is to make sure that the cornflakes are not mushy. Remove the lid and sprinkle a little spring onion on top and enjoy!

This is a 10-minute snack recipe which anyone can easily make with cornflakes. All you need is a small onion, tomato, 2 green chillies, 1 tbsp peanuts, 2-3 tbsp cucumber, chaat powder, salt to taste, 1 tbsp lemon juice, a little red chilli powder and a few coriander leaves. Take a bowl and add corn flakes in it. To this bowl, add finely chopped onion, cucumber, tomato and green chilies. Toss them well and then sprinkle salt to taste, red chilli powder, chaat powder peanuts, coriander leaves and a little lemon juice. Stir once again and enjoy fresh corn flakes chaat.

This dish is prepared in the same manner you would make the Poha. However, you would need to roast the cornflakes in kadhai and keep aside once done. Now, in the same kadhai, add 2-3 tbsp oil and add ½ cup peanuts along with 1 cup puffed cereals. Fry them well but make sure they are not burnt. Next, in the same kadhai, add 1 tsp oil and let it heat. Once the oil is hot enough, add asafetida along with curry leaves, roasted chana dal, ¼ cup cashews, and 2 tsp raisins. Saute them well and then, add a little chaat masala, salt to taste, 1 tsp chilli powder, ½ tsp turmeric and powder. Stir well and sauté for 1-2 minutes. Turn off the flame and then add ready to eat cornflakes in it and stir gently. Try not to break the cornflakes else, the texture will not come out good. Now, once you have given a good stir, transfer in a jar with a tight lid and enjoy this fresh homemade chivda as and when you want. It is crispy, light, sweet and salty and will be loved by everyone.
