Smoked salmon recipes: 'Perfect substitute' for your starter with carrot

Classic smoked salmon starters include a terrine, a mousse, or slices of smoked salmon with bread and a slice of lemon. However, for vegetarian, vegan, and plant-based members of the family, there is an alternative.

Gaz Oakley is a vegan chef from Cardiff, known as the Avant-Garde Vegan.

He worked in a kitchen from the age of 15. Passionate about fitness and veganism, he now he shares his recipe with the world.

Gaz has worked with Wagamama to create vegan food for the chain and had written three cookbooks.

The expert shared how he gets his smoked salmon fix over Christmas dinner.

"Smoked salmon feels synonymous with Christmas but there is no need to miss out," he told Express.co.uk.

Using a clever mix of ingredients it's possible to infuse carrot with the salty taste of smoked salmon.

"The perfect vegan substitute involves marinating thin slices of carrot in miso paste, nori, smoked sea salt, lemon, and maple syrup for 24 hours," Gaz explained.

"It’s amazing how well the carrot absorbs the salty, smoky flavours – serve with vegan cream cheese on rye bread blinis.

For the marinade, Gaz recommends on his website two cups of veggie stock, one tablespoon of miso paste, and three tablespoons of smoked paprika.

This goes in with one big sheet of nori, two tablespoons of maple syrup, two tablespoons of sea salt, and the juice of a lemon.

Vegan cream cheese can be bought from stores, but it can also be made at home.

This is done with cashew nut, lemon juice, nutritional yeast, water, and salt and pepper.

Vegan Christmas alternatives

It can be tricky to know what to eat on Christmas if you have recently gone vegan or are catering to a vegan guest.

However, there are lots of viable alternatives.
