1. Greek Cobb Salad
This Greek Cobb Salad by Maria Koutsogiannis is a great spin on a traditional cobb salad with the addition of feta, olives, and other Greek go-to’s.
2. Sweetcorn Red Pepper Fritters
Great for an easy breakfast or brunch, these Sweetcorn Red Pepper Fritters are packed with vegetables, protein and spices. Served with avocado-tomato salsa and homemade sour cream, these Sweetcorn Red Pepper Fritters by Amy Lanza are vegan and gluten-free.
3. Sweet Chili Peanut Tofu, Vegetable, and Grilled Pineapple Stir-Fry
Not only is this veggie and tofu bowl a great easy single-serve meal, and this Sweet Chili Peanut Tofu, Vegetable, and Grilled Pineapple Stir-Fry by Cara Carin is also a wonderful dish to make a big batch of and share with friends at a picnic or potluck. It’s already so full of amazing, bold flavors, but the grilled pineapple really takes this dish over the top!
4. Quinoa and White Bean Burger
These Quinoa and White Bean Burger by Julie West are loaded with protein and fiber as well as other beneficial nutrients, and they are very filling. As far as veggie burgers go this is fairly easy. FYI, you can make this recipe even simpler by using pre-made flour instead of processing oats like I did. The white bean quinoa burger patties came out fantastic and held up great without falling apart, and they were not dry at all, nor were they mushy. The texture, taste, and visual appeal all hit the mark. Once layered with all the extra goodies, this white bean quinoa burger was supreme––best veggie burger I’ve ever had…am I biased…maybe, but these were divine! And, if you don’t feel like having it on a bun, by all means top your quinoa veggie burger on a bed of fresh leafy greens with a squeeze of lemon, some avocado, salt, and pepper…so good just like that!
5. Watermelon Kiwi Popsicles
These Watermelon Kiwi Popsicles by Lena Ropp are a cinch to make! Simply purée the watermelon, cut up the kiwi slices, freeze them in moulds, and voila! Some seriously refreshing and fruity pops.
6. Healthy S’mores Frappuccino
A healthy twist on a favorite summer treat, this Healthy S’mores Frappuccino is full of rich mocha flavor, sprinkled with gluten-free graham crackers and topped with dairy-free whipped cream. First and foremost, the base of this Healthy S’mores Frappuccino by Kat Condon is actually coffee, because even though this is a s’mores flavored drink it’s still a coffee drink. Because of the protein powder, this is the perfect post-workout snack!
7. Peanut Butter and Chocolate Swirl Blondies
These Peanut Butter and Chocolate Swirl Blondies by Taavi Moore are fluffy, chewy, moist…and will melt in your mouth. A peanut butter blondie swirled with a chocolate batter and sprinkled with chocolate chips.
8. Spinach and Artichoke Soufflé
This Spinach and Artichoke Soufflé by Jennifer Rose Rossano isn’t exactly like a traditional egg-based soufflé, but that’s what makes it so great! Piping hot clouds of “cheesy” tofu and veggies are enclosed in a tender, flaky crust … this soufflé definitely needs to make an appearance on your breakfast table! If you’re running low on time or energy, feel free to use ready-made pie crusts as a shortcut.
