1. Jamaican Meat Patties
These rich, spicy, primally satisfying Jamaican Meat Patties by America’s Test Kitchen are a street‑food staple across the Caribbean. Since plant-based meat shines when it’s layered with pungent flavors, here we create a Jamaican-inspired filling using scallions, garlic, curry powder, allspice, and chile before encasing it in golden, turmeric-infused pastry. Coconut oil makes the traditional pastry vegan-friendly.
2. Chick’n Scallopini with Piccata Sauce
This Chick’n Scallopini with Piccata Sauce by Katherine Henderson is filled with bright, sunshiny lemon flavor. Plus it is so easy to make, and the taste is amazing!
3. Butterbean Salad with Green Herb Dressing
This is a very flavorful bean salad with a tangy herb dressing. When kept cold, it’s an excellent picnic side dish.
4. 10-Minute Guacamole Dip
This 10-Minute Guacamole Dip by Sarah Bond has a secret — there’s hidden spinach! Think the fresh homemade guacamole you know and love, but with the addition of healthy, vitamin-packed, vibrant green spinach for an ultra-flavorful combination! Best of all, it’s ready in just 10 minutes.
5. Mushroom Shawarma
This Mushroom Shawarma by Kirsten Kaminski is a combination of cuisines. In Thailand, I got inspired to use oyster mushrooms as a juicy meat alternative, and in Israel I learned to love the smell of shawarma. Combining the two creates a mouthwatering dish that is one of my most popular recipes among family and friends. Take a bite of the warm pita filled with creamy hummus, tahini, salad, tangy amba and crispy mushrooms, and fly to heaven! 6. Mediterranean Lentil Salad
This Mediterranean Lentil Salad by Allie Penner takes full advantage of summer vegetables: tomatoes, cucumbers, peppers, and parsley. It’s very easy to make and is an excellent source of protein, fiber, and antioxidants.
7. Nashville Hot Chicken Sandwich
Add some delicious flavor to your lunch or dinner meal with this spicy Nashville Hot Chicken Sandwich by Shanika Graham-White made from cauliflower topped with simple ingredients and a homemade herb aioli sauce.
8. Watermelon Doughnuts
When it comes to making a superb baked doughnut, the end result needs to be light, fluffy, and pack an amazing flavor profile. These glazed Watermelon Doughnuts by Gabrielle St. Claire do just that. The doughnuts themselves are watermelon-flavored and their vibrant pink glaze uses a combination of watermelon and dragon fruit flavors to give these a delicious and summery flavor.
9. Grilled Kofte Wraps
Throughout the Middle East, kebabs called kofte are made by mixing ground beef with delightfully extravagant quantities of fresh herbs and warm spices. The beef mixture—formed around skewers, rolled into logs, or pressed into patties, depending on region and personal preference—is grilled over high heat and served with a creamy yogurt sauce. Since the protein composition in plant-based meat makes it more delicate than beef, our plant-based kofte were prone to breaking apart on the grill when formed onto skewers. Doing away with the skewers and rolling these plant-based kofte into logs in these Grilled Kofte Wraps by America’s Test Kitchen allows us to handle them more gently with tongs, so they’re less apt to crumble. (A well-oiled grill grate helps, too.) The tangy yogurt-tahini sauce cuts through the koftes’ richness and spice, and red onion, tomato, and shredded lettuce add a fresh, crisp touch.
10. Best Black Bean Spaghetti Bolognese
My go-to plant-based spaghetti Bolognese is built from the authentic Italian recipe, but this Best Black Bean Spaghetti Bolognese by Andrea Soranidis swaps the meat with convenient and protein-rich black beans for a hearty, satisfying meal. Whether you need to impress a date or your family, this vegan take on classic Bolognese is sure to wow your table companions.
