This easy recipe was inspired by a fiddlehead recipe from ItsAVegWorldAfterAll.com. Cooked in a lemon garlic butter, these fiddleheads make the perfect side dish for fish, chicken or beef.

Ingredients
- 1 pound fiddlehead ferns, washed several times, peeled and any brown papery skin removed
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, pressed or minced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Here's how to make it:
- Cook the cleaned fiddleheads in boiling water for about 10 to 15 minutes. Drain and rinse them well.
- Melt the olive oil and butter together in a large skillet. Add the garlic and cook 30 seconds. Add the fiddleheads. Season with salt and pepper. Cook, stirring, about 3 minutes. Add the lemon juice and zest. Cook about 2 to 3 more minutes.
