Apricot Chutney
As the summer heat hits, our mind hits the juicy fruits: vibrant berries, peaches and what not! This summer, make room for some ripe-golden apricots.This delightful fruit has the perfect combination of sweetness and tart and is an excellent source of fibre. Its subtle floral undertone combined with a hint of tanginess adds a refreshing note to each bite.
Ingredients:
100g Dried Apricots
4 Cashews
10 Raisins
1 cup powdered jaggery
½ tablespoon salt
½ tablespoon ground black pepper
½ tablespoon red chilli powder
2 tablespoon green cardamom powder
1 tablespoon vinegar
½ tablespoon garam masala
Directions:
Step 1
In a cooking pot put some water & chopped ginger
Step 2
Add washed Dried Apricots to the pot
Step 3
Cover it & cook for around 45-50 minutes, until they turn mushy
Step 4
Mash them nicely with a spatula or masher
Step 5
Add raisins, cashews (chopped), powdered jaggery, salt, ground black pepper, red chilli powder, garam masala, cardamom powder & vinegar to your mashed apricots
Step 6
Mix everything, cover and cook for another 5-7 minutes

4 Almonds
4 Cashews
2 Pistachios
3 Fard Dates
3 Pods
1 Figs
3 Raisins
Directions:
Step 1
In a blender add Almonds, Cashews, Pistachios & Cardamom Pods and grind them to a fine powder
Step 2
In the same blender add chopped Figs, Raisins, Dates & 1/3rd of the milk & grind to turn it into a paste
Step 3
Add the rest of the milk, & ice. Give it a final blend
Step 4
Pour into a glass & serve chilled

Step 1
Preheat oven to 325°
Step 2
Combine the first 4 ingredients, stirring with a whisk
Step 3
Combine oats, barley, walnuts, wheat germ, cinnamon & nutmeg in a large bowl. Add syrup mixture; stir well to coat
Step 4
Spread oat mixture evenly onto a jelly-roll pan coated with cooking spray. Bake at 325° for 30 minutes or until browned, stirring every 10 minutes

Stir in the nutty mix. Cool completely
