As part of a nutritious Mediterranean diet, I cook a lot of salmon. Healthy salmon is loaded with omega-3 fatty acids and protein, which is why it's a big part of my heart-healthy Mediterranean diet promoting health and longevity. I purposely try to have leftover salmon to use in various recipes calling for salmon or seafood. This easy five-ingredient honey Dijon salmon spread recipe with lemon mascarpone cheese is my new favorite way to use cooked salmon. Mascarpone cheese is made from heavy cream and lemon juice, so it has a to-die-for buttery texture. It's ultra creamy and has a somewhat sweet flavor, making it ideal for sandwich spread recipes, sauces, desserts and more.

- If you don't have leftover cooked salmon, you can use canned salmon for this recipe.
