Ingredients

  • 500 g

    cranberries, fresh or frozen

  • 100 g

    caster sugar

  • Pared zest 1 orange

  • 100 ml

    gin, see intro

  • 2

    rosemary sprigs

Directions

    1. Step 1Put all the ingredients in a medium pan. Bring to the boil, then simmer, stirring occasionally, for 10-15min, or until most of the berries have burst and the liquid has thickened slightly. Remove rosemary sprigs.
    2. Step 2Empty into a heatproof serving bowl and cool completely (the sauce will thicken further on cooling).
    3. Step 3Chill until needed.

Make, cover and chill up to 3 days ahead. Alternatively, freeze in a sealed container for up to 1 month. To serve, thaw in fridge.
