Marinating meat before grilling is always a good idea because it imparts so much flavor and helps keep the meat moist. This marinated grilled chicken recipe takes it a step further by using flavors that are heavy hitters. Strong flavors that sink into the chicken and make it pop with flavor. So much so that you may never forget that first bite (aka life changer). Well, it may not change your life, but it'll make you remember dinner for a while!
Boneless chicken breasts are marinated in a simple six-ingredient marinade made with vinegar (acidity), spicy brown mustard or Dijon mustard (tanginess), garlic (speaks for itself), lemon (tartness), brown sugar (sweetness) and olive oil (richness). Marinate the chicken for as long as you can, but shoot for at least six hours. When ready to cook, remove the chicken from the marinade (throw it out) and grill until cooked through and well seared on both sides.
These grilled chicken breasts are delicious with grilled vegetables like zucchini, red pepper, tomatoes, red onion and eggplant. You could use chicken thighs instead of chicken breasts, and even add fresh herbs or dried herbs to the mix for a little freshness. This is a flavor-packed chicken dinner that's easy enough for Monday, but special enough for weekend guests.

Ingredients
- 4 - 6 boneless skinless chicken breasts
Marinade
- 1/4 cup apple cider vinegar
- 3 tablespoons spicy brown mustard or Dijon mustard
- 4 cloves garlic, minced or pressed
- 2 lemons, juiced
- 1/2 cup brown sugar
- 6 tablespoons olive oil
Here's how to make it:
- Combine all the marinade ingredients in a plastic zipper bag or shallow dish. Whisk to combine. Add salt and black pepper, to taste. Add the chicken, cover and refrigerate for at least 6 hours or overnight.
- When ready to cook, remove the chicken from the marinade (discard the marinade). Heat the grill to medium-high and cook the chicken about 8 to 10 minutes per side, depending on thickness of chicken breast.
