Tacos for breakfast?
We haven’t come across a taco recipe that we don’t like yet, but when I came across these apple pie breakfast tacos from Lauren Harris-Pincus, the founder of NutritionStarringYOU.com and the author of The Everything Easy Pre-Diabetes Cookbook, I Are certainly skeptical.
But after creating the batch, we are happy to announce that we are participating.
“Everyone loves hearty tacos for dinner. Why not switch things and enjoy a light and sweet version for breakfast? Apples and cinnamon are the perfect fragrant combination for the fall. These Apple pie breakfast tacos are sweet, creamy, crunchy and salty. It’s a gluten-free treat, “says Harris Pincus. A registered dietitian recommends serving one for a light meal and two for breakfast to get about 300 calories and 15 grams of protein without sugar.

Make two tacos
Preparation time: 5 minutes
Cooking time: 10 minutes
Two-component jalapeno cheddar crisp for a simple game day snack
material
- One small peeled and diced apple (I like honeycrisp, jazz, gala, or wisteria) about 3.5 ounces
- 1 packet stevia split
- Divide 3/4 teaspoon of lemon juice
- Taste with 1/4 teaspoon or more of cinnamon
- 1 teaspoon light butter spread
- Blend / whip 1/2 cup of low-fat cottage cheese, see instructions
- Two organic taco shells

procedure
- Put apples, lemon juice, stevia packets ½ and cinnamon in a bowl and mix.
- Melt the butter over medium heat.
- Add the apple mixture and fry for about 10 minutes until the apples are tender.
- Place the cottage cheese and the other 1/2 of the stevia packet in a blender or food processor and pulse until smooth. To get around this step, just buy whipped (easy-to-read) cottage cheese.
- Divide the cottage cheese into taco shells and add the apples.
- Decorate and serve extra cinnamon.
