Enjoy a summer get together with a refreshing easy recipe with your favorite summer fruit — watermelon! We are celebrating National Watermelon Day with two quick and easy recipes.
Fruity Watermelon Pizza
What you will need:
- 1 whole watermelon
- Fruit of your choice (I chose strawberries, blueberries. kiwi, and shredded coconut)
- Cream cheese
- Ricotta cheese
- Honey
Steps:
- Cut watermelon in half & cut a large, round piece off so it looks like a pizza
- Mix some cream cheese, ricotta, and honey together
- Spread it on the watermelon slice
- Top with fruit
- Cut into triangles & enjoy!
Watermelon Basil Mocktails
What you will need:
- Watermelon
- Fresh lime
- Fresh basil leaves
- Agave
- Club Soda
- Ice
- Feel free to add some vodka or rum of your choice
Steps:
- Cut up some watermelon & put it in the cocktail shaker (about 2/3 cup)
- Add a few chopped basil leaves in there
- Squeeze half a lime in the shaker
- Add 1-2 teaspoons of agave
- Shake it up
- Add ice to your cup
- Top off with club soda
- Enjoy!
