Sausage Gravy
Brown ground sausage in a skillet over medium high heat, breaking up as it cooks. Add chopped onions and sweat till soft. 8- 10 minutes. Reduce the heat to low and sprinkle the flour over the onions and sausage and stir to coat. Let cook for 2 mins. stirring occasionally. While stirring slowly add your milk and increase the heat up to medium high. Once the mixture thickens, reduce heat back to medium.
Breakfast sausage 1lb
Yellow onion, small 1
AP Flour 1/3 cup
Whole Milk 3.5 cups
Kosher Salt ½ tsp
Ground Black Pepper ½ tsp
Fresh Sage 1 tsp
Herb Roasted Potatoes
Quarter red potatoes and blanch for 10 minutes. In a mixing bowl, add herbs (rosemary and thyme), onions, poblano peppers, and potatoes and mix well. In a hot pan, place potatoes and sprinkle with salt and pepper and let cook. Flip when golden brown. Cook for several minutes longer until both sides of the potatoes are crisp and flavorful
