1. Linguine with White Clam Sauce

Source: Linguine with White Clam Sauce

Just like clam chowder, there’s a white and red version of clam sauce. I’m on team white sauce for soup and sauce! This Linguine with White Clam Sauce by Brianna Claxton was common in my house growing up and is popular among the Italian restaurants in Buffalo, New York, as well. I was never a huge fan of clams, but the other flavors balance everything out and I was a fan of this dish. When cooking vegan, clams are easily replaced with jackfruit or hearts of palm, both of which offer a similar flavor and texture since they’re both generally brined. Even if you aren’t vegan yourself but still don’t like clams very much, you’ll want to try this one out!

2. Tofu Sofrito Bowl

This Tofu Sofrito Bowl by Desiree Nielsen makes the most of those spices sitting in your pantry. Tofu is also a great way to get more protein, which is critical for supporting the immune system and rebuilding gut cells when following a low-FODMAP diet. The sofrito is great on its own but I have added even more flavour and texture with an easy marinated cabbage and diced kohlrabi. These bowls have everything you need to fight inflammation and boost gut health—plenty of veggies, plenty of fibre, and anti-inflammatory nutrients to support healing. This will keep well in the fridge for up to five days, so it is perfect for meal prep.

If you have ever had Jamaican curry, you know it’s spicy! Embrace the heat with this Spicy Curry Vegan Meatballs and Orzo by Shanika Graham-White, a tender vegan meatball mixture simmered in a sauce of hot peppers, veggie stock, garlic, and coconut milk. This is the meatiest vegan dish on Earth!

4. Italian Fried Potatoes With Peppers

7. Asparagus Almond Crostini With Fennel Frond Gremolata

Fennel takes on such an amazing flavor when it’s roasted as the licorice flavors mellow and caramelize. For these Asparagus Almond Crostini With Fennel Frond Gremolata by Courtney West, pair it with spicy radishes and earthy asparagus to create a tangle of roasted veggie goodness. For some different textures, throw some almonds in the mix for a bit of crunch. To create a bit of contrast and be mindful about reducing waste, make a fresh gremolata out of fennel fronds, lemon zest, and garlic to top the crostini. If you don’t have any bread, you can serve this over some greens or your favorite cooked grain and it will still be delicious.

8. Frittata
