Because I’m obsessed with caramel, you can probably understand how I feel about Twix bars, right? I mean, that was my candy growing up. Re-creating this cookie, caramel and chocolate bar has been a highlight of my career mostly because I not only made a delicious dessert but a nutritious dessert. Traditionally it’s made with eggs, but you can use medium-firm tofu, which when simmered up in the fiery, garlicky, chunky tomato sauce, becomes silky-soft like egg white in texture.
