1. Vegetable Taquitos
These Vegetable Taquitos by Michaela Vais make a delicious lunch or dinner and they’re packed with veggies!
2. Jamaican Jerk Walnut Tacos
If you love the flavors of Jamaican Jerk, then you’ll surely love these delicious Jamaican Jerk Walnut Tacos by Shanika Graham-White, made with a flavorful walnut mixture, homemade jerk seasoning, roasted veggies, pineapple chunks, and an easy lime sauce. These little tacos have so much flavor and is a great meatless alternative for lunch or dinner.
3. Crispy Tofu Katsu
Vegan tofu katsu is the perfect accessory to stir-fry noodles, on top of a fluffy bed of rice, or shared with a light soup. 5. Birria Ramen
Birria ramen takes two incredible dishes (birria and ramen) and fuses them together to create something wonderful. The end result of this Birria Ramen by Mitch and Justine Chapman is a spicy, savoury broth filled with noodles and loaded with flavorful garnishes. Try a plant-based version made with shiitake mushrooms and prepare to be shocked!
6. Without-a-Wok Jackfruit Lo Mein

Lo mein means “tossed noodles.” It’s a traditional Chinese dish of noodles tossed with meat, vegetables and brown sauce. I used to love ordering it whenever we went out for Chinese food. In this plant-based version, shredded jackfruit is the meat and the vegetables are mushrooms, carrots and bok choy, but they are definitely swappable with your favorites. Use any noodles you like. I like thick Chinese noodles like yakisoba, but thin noodles, rice noodles, ramen noodles and even spaghetti all work great. And, you don’t need a wok to make this Without-a-Wok Jackfruit Lo Mein by Lisa Dawn Angerame. A wide shallow pan works just fine.
