Start your Diwali snack journey with one of the famous street foods of Gujarat — the sweet and tangy Dabeli. This recipe gives the perfect twist to the classic dish, making it a delectable Diwali treat full of creamy potatoes and spicy chutney.

- 2 tablespoons of oil
- 1/4 cup Dabeli masala
- 2 tbsp sugar
- Salt to taste
- 2 boiled potatoes, mashed
- Garlic chutney
- Tamarind chutney
- Masala peanuts

- Begin by creating the flavourful Dabeli stuffing. In a pan, heat 2 tablespoons of oil. Add 1/4 cup of Dabeli masala, a little water, 2 tbsp sugar, and salt. Now, add in the mashed boiled potatoes into this mixture. Allow it to cool and set it aside.
- Unfold the puff pastry sheet and roll it a little bit.
- Spread the prepared Dabeli mixture evenly over the entire surface of the puff pastry sheet.
- Drizzle garlic chutney and tamarind chutney generously over the mixture.
- Sprinkle a handful of masala peanuts and onion to add a satisfying crunch and fresh aroma to your pinwheels.
- Carefully roll up the pastry sheet, ensuring that the delicious filling is snugly enclosed within.
- Secure the ends by gently pressing them, ensuring that your pinwheels hold their shape during baking.
- It’s time to cut your masterpiece into bite-sized pinwheels, making sure they’re of uniform size for even baking.
- Apply a milk wash on each pinwheel.

- 5 medium-sized potatoes boiled / 3 cups of boiled and chopped boiled potatoes
- 1/4 cup yogurt
- 4 tbsp salted butter
- 2 tsp chaat masala
- 1/2 tsp black salt
- 1 tsp salt
- 1/2 tsp roasted cumin powder
- 1/2 cup onion chopped
- 1/2 cup tomatoes chopped
- 2 green chilies chopped
- 2 tbsp cilantro chutney
- 2 tbsp Imli chutney
- Sev or Bhujiya to garnish
- Boondi to garnish
- Chopped cilantro to garnish
- More chaat masala and red chili to sprinkle on top (optional)

- In a chopped add boiled potatoes, yogurt, chaat masala, salt, black salt, roasted cumin, and butter. Blend until smooth. Add 1 tbsp yogurt extra if needed.
- Spread mashed potatoes on a platter, top with tomatoes, onion, green chili, cilantro, Imli chutney, cilantro chutney, sev/bhujiya, boondi, chaat masala, and a pinch of red chili powder.
- Serve with chaat papdis or your choice of chips.

- Take 4-5 betel leaves (paan).
- Break them roughly and add to a blender.
- Add 2 tsp saunf (fennel), 2 tsp desiccated coconut, a pinch of elaichi powder, 2 tsp sugar, 2 tbsp Gulkand, and milk as required.
- Now, add a scoop of vanilla ice cream or 2 tbsp malai (cream).
- Mix in a few ice cubes and a few drops of green food color (optional).
- Blend well!
- Pour into shot glasses and garnish with dry rose petals.
Pro tip: If you want to store this, make a concentrate of all the ingredients minus the milk and ice cream and freeze it for 10-12 days. Use it as needed by blending with milk, ice, and ice cream.
