Dole Food Company, Inc. is celebrating this year’s spooky season with a collection of healthy Halloween recipes, including several inspired by Disney and Pixar’s “Monsters, Inc.”
Dole’s “Fruits and Vegetables Don’t Have to be Scary” campaign is designed to help kids and their families celebrate their healthiest Halloween ever without sacrificing any of the fun.
“One of our aspirations at Dole is to prove that holiday eating can be healthy, delicious, and fun all at the same time,” explained Dole’s Nutrition and Health Communications Manager Melanie Marcus, RD, MA. “From classic Dole recipes like our Sparkling Ghouls and Ghost Bananas to dishes developed as part of our collaboration with ‘Monsters, Inc.,’ we’re inviting pandemic-weary families to make this Halloween their tastiest and healthiest ever.”
Many of the recipes are vegetarian, vegan, and/or gluten-free — and all of them are fun — including Dole’s Pineapple Jack-O-Lantern fruit salad that challenges families to carve a pineapple instead of the traditional pumpkin using downloadable carving templates.
Here are the Dole Halloween Recipes:
- Sparkling Ghouls (vegetarian, low sodium, low fat, and gluten-free) – This tasty themed drink combines honey, water, ginger, pineapple, and seltzer. Add cranberry “blood” if you dare.
- Crustless Pumpkin-Banana Pie (vegetarian and gluten-free) – Bananas, eggs, pumpkin, nonfat milk, sugar, cornstarch, and pumpkin pie spice combine for this crustless favorite.
- Orange and Green Meanies (vegetarian, vegan, and gluten-free) – These centerpiece-worthy salads use organic spring mix, hand-carved oranges, papaya, lentils, pumpkin seeds, hazelnuts, and an orange vinaigrette. Top with alfalfa sprouts to complete the spooky look.
- Crazy Eyes (vegetarian, vegan, and low sodium) – Look no further for a scarily simple snack than this recipe featuring almond butter-covered bananas, blueberries, and natural strawberry preserves for the “eye-deal” healthy Halloween snack.
- Oodles of Monster Swoodles – Sweet potatoes or broccoli stems are much more fun when spiralized and tossed with garlic, olive oil, and cherry tomatoes for this original Dole recipe inspired by “Monsters, Inc.”
- Mike Wazowski Fruit Stack – The “Monsters, Inc.” hero comes alive on the plate thanks to pineapple and kiwi slices, green and horned melon, dragon fruit, and dried blueberries to make Mike’s famous single eye.
- Ghost Bananas (vegetarian, low sodium, and gluten-free) – Bananas are spookiest when rolled in coconut pieces and garnished with chocolate chips. Adding strips of fruit leather creates mummies for an edible monster mashup.
- Pineapple Jack-O-Lantern and Bountiful Fruit Salad with Orange-Mint Dressing (vegetarian, gluten-free, low sodium, and low fat) – Carve a pineapple Jack-O-Lantern and toss the freshly sliced insides with grapes, strawberries, bananas, spring mix, and an orange-mint dressing for a healthy Halloween treat.
- Banana Pumpkin Spice Bread – Dole’s version of the favorite fall treat combines bananas, pumpkin and apple puree, and pumpkin pie spice with cinnamon, honey, maple syrup, whole wheat flour, and baking powder.
- Pumpkin Spice Plantain Chips & Curry-Apple Dip (vegetarian and gluten-free) – Baked plantains tossed with oil, pumpkin pie spice, and salt are even tastier when served with a dip made with apples, red onion, curry powder, and Neufchatel cheese.
- Little Boo Brussels Sprouts Bites – Even Mike and Sully’s pal Boo won’t be afraid of this healthy side dish of air-fried Brussels sprouts dipped in a mixture of nonfat Greek yogurt, garlic, olive oil, and lemon.
- Spider Cluster (vegetarian, vegan, low sodium, and gluten-free) – Single-serving salads of spring mix, figs, and pears are topped with a dressing of green onions, cranberries, olive oil, balsamic vinegar, maple syrup, and rosemary and served in mini pumpkins with pipe-cleaner spider legs.
