Beets are delicious (really, they are!), and they're part of a healthy Mediterranean diet that may help lower cholesterol, reduce inflammation and increase heart health, among the other health benefits of beets.
This easy four-ingredient balsamic honey roasted beets recipe is savory and sweet all at once. Even better, this nutritious baked beets recipe is simple to prepare and ready in about 45 minutes. Your shopping list: fresh beets, olive oil, balsamic vinegar and honey. Toss to coat then bake until tender.

- 3 large beets, peeled and cut into small pieces
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey

Recipe Notes
- I used a casserole dish sprayed with cooking spray, but you can also use a metal baking pan lined with aluminum foil, which makes for easy cleanup (beets can be messy)!
- The bright color of beets can rub off on fingers, clothing or counters, so quick cleanup to avoid staining is helpful.
- I stirred the beets halfway through the baking time, but it's not absolutely necessary.
- Store leftovers in a container in the refrigerator for up to three days. Reheat in the microwave.
Here's how to make it:
- In a large mixing bowl, add the olive oil, balsamic vinegar and honey. Stir to combine.
- Add the beets to the mixing bowl and toss to coat beets in the mixture.
- Pour the beets into a casserole dish or baking pan in an even layer. Add salt and pepper, to taste, if desired.
- Bake in a preheated 375-degree F oven. About halfway through the baking time (after about 15 minutes), remove pan from oven and stir beets to re-coat them in the mixture.
- Put them back into the oven to continue roasting for about 15 to 18 more minutes, or until crisp-tender.
