1. Baked Tofu Buddha Tray
Standard Buddha bowls will be a thing of the past once you use your sheet pan to cook the ingredients. Minimal washing up makes this recipe a go-to for those evenings when you’ve had a long day and can’t be bothered to cook. With the help from the oil, the outer edges of the red cabbage will crisp up nicely, yet the inside will be soft. The red cabbage chunks will fall apart in your mouth. Roasted red cabbage is a favorite vegetable and the paprika smoked tofu chunks with a dollop of hummus are delightful. This Baked Tofu Buddha Tray by Luce Hosier is a perfect prep recipe to ensure you’re feeding your body plenty of goodness even on a busy day. 3. Roasted Red Pepper Soup
You might notice that many Roasted Red Pepper Soup recipes add carrots and potatoes but I find that the addition of those items tends to take away from the robust roasted pepper flavour. Try out this Roasted Red Pepper Soup by Zuzana Fajkusova and Nikki Lefler!

6. Butterscotch Hay Stacks
A “haystack” is a Southern treat comprised of butterscotch, peanut butter, peanuts, and asian rice noodles. As a whole, it’s a combination of somewhat random ingredients that just seamlessly go together. Whether you have refined tastes or jump at the opportunity to reminisce with classic recipes turned vegan, you’ll love Butterscotch Hay Stacks by Gabrielle St. Claire.
7. Butterscotch Bread Pudding
Fellow carboholics know that bread pudding is just the ultimate way to consume bread. Pieces of bread baked in a sweet, creamy sauce? Yeah, it’s one of the best things ever. This Butterscotch Bread Pudding by Kristy Turner is baked with dried apricots, walnuts, and homemade butterscotch sauce. Then it’s drizzled with even more butterscotch sauce. Carbolicious and compassionate.
8. Butterscotch Caramel Corn
Everyone knows how easy it is to make popcorn, but did you know that with just a few extra steps you can have homemade butterscotch caramel popcorn?! A delicious combination of caramelized brown sugar, butter, and vanilla is poured over your favorite popcorn, then baked to a crispy and chewy, salty and sweet golden perfection. Plus, this Butterscotch Caramel Corn by Adam Merrin and Ryan Alvarez takes just five minutes to make the creamy butterscotch, so the only hard part is having to wait patiently while it cooks in the oven developing its satisfying crunch.
