Holy chocolate deliciousness! I had to flip a coin on whether this recipe should appear in this chapter or in the sweets chapter, as these are so good they could easily pass as dessert. For the sake of experiencing culinary pleasure throughout the day, breakfast takes the cake for these donuts. I have been making these for years on retreats and for clients, and they are the favorite every single time. I’ve even looked into what it would take to get these on grocery store shelves, these Blender Dark Chocolate Donuts by Bailey Ruskus that good. For now, you’ll just have to make these yourself and get lost in how truly delicious plant-based treats can be. These little gems are a hybrid of brownies, muffins, donuts and zucchini bread. Oh ricotta … how I miss you. But, turns out, I don’t need you… sorry to be so blunt, but I’ve moved on. Cashew cheese is here! Lemon and ricotta… and blueberries, what a classic combo. Usually, when I’m making vegan pancakes, I normally use some mashed ripe bananas that I basically always have handy, I didn’t need to of course, I could have just used more cashew cheese or almond milk, but guess what… lemon and ricotta cashew cheese and blueberries AND BANANA?? It makes these Vegan Lemon Banana Ricotta Pancakes With Dried Blueberry Compote by Alison Marras even more TASTY!

Try torrejas for a Mexican take on French toast. In this vegan version of Torrejas by Mitch and Justine Chapman, bolillo bread is coated with plant milk and chickpea flour to replace the egg batter. The slices are cooked to golden brown perfection, then finished off with a cinnamon-infused piloncillo syrup.
