When I was transitioning to a plant-based diet, dairy substitutes came easy to me, but I could not figure out how to recreate my favourite egg-based dishes. Then some genius figured out that chickpea flour—a staple in many South Asian kitchens—would work. Chickpea flour offers filling protein and plenty of minerals to make it a truly nutritious substitute. This Chickpea Omelette by Desiree Nielsen is one of my favourite breakfasts and it also transitions into a terrific dinner. Once you master it, you can stuff this omelette with any of your favourite fillings—from spinach and tofu feta cheese to roasted red peppers and onions.

2. Lemon Corn Cookies (Paste di meliga)

Paste di meliga are a traditional cookie from Piemonte. Meliga, in fact, is an ancient corn flour from the region, which in dialect is called melia, or meira, from which these cookies take their name. The ingredients fort these Lemon Corn Cookies (Paste di meliga) by Alice Carbone Tench are simple: corn flour, butter, sugar, vanilla, and lemon zest. This version, a little softer and without butter, is a little lighter. Because of the addition of lemon juice, it’s tarter and lemony.

This Greek Jackfruit Kebab by Andri Neocleous is the perfect option for a healthy yet comforting dinner. The jackfruit in this is super succulent and the mushrooms give an extra umami flavor. Served with a greek salad and vegan tzatziki.

Crispy corn tortillas surround a soft, perfectly-seasoned black bean filling. These Crispy Black Bean Tacos by Mitch and Justine Chapman are super easy to make and taste even better with a drizzle of avocado cream sauce.
