The secret to making a great vegan carbonara is kala namak, or Himalayan black salt. It’s a sulfurous salt found in South Asia that I’ve been using for years to add that “eggy” flavor to my tofu scrambles and vegan egg salad—and it turned out to be the perfect addition to this Creamy Carbonara with Coconut Bacon by Rebecca Hincke as well! It can be a little tricky to find, but it’s worth the effort of sourcing from a South Asian supermarket (you can usually find it online as well) for a more authentic-tasting vegan carbonara.
