1. Falafel Bowls

Vegan Falafel Bowls

These Falafel Bowls by Bri Beaudoin are as delicious as they are satisfying. This recipe calls for soaking dried chickpeas overnight, so make sure you plan ahead. As much as I love to encourage substitutions, in this recipe using dried chickpeas is a MUST. Canned chickpeas will introduce too much moisture and make the falafel mushy. As you pulse the mixture, it might be tempting to throw in extra binders, but trust me, it doesn’t need it. Use a light hand when shaping and don’t compact the falafel too much—you don’t want them to be dense. These homemade falafel balls are baked rather than deep-fried. If you have an air-fryer, use it for an even crispier exterior.

4. Oven-Roasted Ratatouille with Flageolet Beans

Vegan Oven-Roasted Ratatouille with Flageolet Beans

This Oven-Roasted Ratatouille with Flageolet Beans by Anita Bean is my go-to midweek dish when courgettes are plentiful and in season. It could not be easier to make – you simply add all the ingredients to a roasting tin and let the oven do the work. It is packed with beta-carotene, vitamin C, folate and fibre. I have used flageolet beans (small, immature kidney beans, widely available from supermarkets) in this dish to boost the protein content but you can easily substitute with chickpeas or any other type of canned beans. You can also substitute fresh tomatoes for canned when in season and add a pinch of dried chilli flakes if you like heat.

5. Acorn Squash and White Bean Stew

This Acorn Squash and White Bean Stew by Megan Calipari will warm you up on the coldest day. Its hearty and full of veggies and this recipe makes a big pot so you can eat dinner and lunch for a few days. Or you can eat it for every single meal while you’re fighting off a gnarly cold like I did a couple weeks ago. No regrets.

Moist and airy, nostalgically deep and dark, and perfect in every way, you’ll never need another chocolate cupcake recipe after you try this one. The magic texture of this Chocolate Cupcakes With Rich Maple Buttercream by Renee McKenzie comes from a fascinating chemical reaction between the acidic cocoa powder, baking soda, the hot coffee, and vinegar. Topped with a delicious maple buttercream frosting, what more could you ask for in a dessert?

8. Somen Noodles With Nori Dressing

Vegan Somen Noodles With Nori Dressing

Somen noodles are very thin white Japanese noodles made of wheat flour and are usually served cold. As this recipe proves, it is a breeze to make a delicious and filling meal with Somen noodles as the base. This Somen Noodles With Nori Dressing by Lan Pham Wilson contains a savory-sweet broth spiked with soy sauce and maple syrup, a refreshing seaweed dressings, and plenty of garnishes, including sliced cucumbers, kimchi, scallions, and nuts.
