1. Italian Style Lentils

Vegan Italian Style Lentils

This recipe for Italian Style Lentils by Kristina Humphreys is simple in prep, yet deep in flavor thanks to the quick prep and long cooking time. The herb-infused lentils are also hearty and full of protein–a satisfying and warm winter meal after an icy day. Along with plenty of sautéed garlic, the lentils absorb flavors from the herbs and spices as they simmer until tender. Italian style lentils are delicious over noodles, rice, or even as a soup served with a side of crusty bread.

2. Black-Eyed Pea Curry

Vegan Black-Eyed Pea Curry

Colder, rainier days call for warm, comforting recipes. Meals with legumes, especially beans, are a great example of this. The texture, rich flavor, and satiety they give us are responsible for this feeling. Adding legumes with spices, even better, since this “warming” effect increases even more. If you’re looking for a cozy meal, this Black-Eyed Pea Curry by Sara Oliveira is perfect!

3. Olive Oil Bread Rolls

Light, fluffy, and savory, these olive oil bread rolls are perfect for any dish. Whole wheat buns are speckled with tangy olives, fresh rosemary, and garlic powder and topped with sesame and poppy seeds. TheseOlive Oil Bread Rolls by Lenia & Dimitra are perfect for pairing with soup, dinner, or making sandwiches.

4. Raw Lemon and Fig Cheesecake

The sweet, fruity flavor of the figs pairs delicately with the lemon in this Raw Lemon and Fig Cheesecake by Emily von Euw; and as usual the creaminess from the cashews creates one unbelievably smooth end result that everyone is going to gawk at. Wait – can you gawk with your mouth? Well either way, you can’t go wrong with raw vegan cheesecake. If you’re allergic to nuts you can use young coconut meat instead of cashews, and oats or buckwheat groats instead of pecans; hip hip hurrah for versatility in the kitchen! Although you can serve this cheesecake the day after you make it, I seriously recommend letting it sit another day in the fridge so the flavours can develop (just make sure it’s covered). It’s worth it, trust me.

5. Hash Brown Pizza

This is the best idea for a pizza crust we’ve ever seen – how did we not think to merge our favorite breakfast food with our favorite anytime food before now? The thin hash brown crust is pressed out thin and topped with whatever your little heart desires. This Hash Brown Pizza by Kristen Genton is the perfect vehicle to get creative with and make the comfort food of your dreams.

6. Mulled Rose Cranberry Pear Cider

This Mulled Rose Cranberry Pear Cider by Claire Ragozzino is full of flavors that complement each other beautifully and warm you in wintertime. You will not believe how simple it is to make! Give it a go!

8. Mushroom and Lentil Burgers With Pickled Red Onion

Looking for the perfect veggie burger? Well, look no further. These Mushroom and Lentil Burgers With Pickled Red Onion by Natalie Yonan are a two-for-one power combo of flavor and protein. Onions, garlic, smoked paprika, and mushrooms give it a smoky and savory flavor that pairs perfectly with the pickled red onions, and cheesy vegan sauce.
