This Maple Pecan Tahini Fudge by Tara Sunshine is luscious and creamy with a wonderful maple flavour and a nice little crunch from the pecans. Bonus is, it’s vegan, paleo, keto, refined sugar free, and packed with healthy fats and protein, too!

2. Comforting Veggie and Tofu Pho

What makes this delicious Comforting Veggie and Tofu Pho by Claire Ragozzino extra special is the rich broth. Lemongrass, anise pods, whole cloves, and plum vinegar creates a rich umami taste that compliments the soup perfectly.

3. Almond Horchata

This Almond Horchata by Pavani Nandula has a hint of lime and almonds with a rich, smooth and creamy finish. But this recipe is a little unusual, here rice and ground almonds are cooked with almond milk and spices until tender and then chilled thoroughly. The mixture is then strained to get creamy and delicious horchata. It’s perfect to sip on any time of the year but especially good on a hot summer day.

This Curried Rice and Cashews by Crissy Cavanaugh is pretty much a big hug in a bowl, warming, comforting and healing!

5. Inutak: Filipino Rice Cakes in Coconut Milk

As far as Asian desserts go, inutak may be one of the lesser known ones, but it is a delicious treat regardless. It’s a Filippino sweet comprised of rice cakes cooked in sweetened coconut milk, often with ube yam powder, to make it purple, until slightly caramelized on the outside. Then, it is served in glasses with a scoop of vanilla or ube ice cream. Fun fact: inutak came from the Tagalog root word “utak” which means brain, first because it has that same consistency and next it that when it broils the top rises to the top and shapes into a brain form. 6. Caramel Apple Nice Cream Sundae

In this decadent nice cream sundae, the apples are blended with the bananas for a fresh apple-flavored frozen dessert that is as yummy as it is unexpected. It’s then layered with warm homemade caramel sauce and chopped peanuts, for a delicious treat that tastes just like biting into a caramel apple. You could even make this Caramel Apple Nice Cream Sundae by Larice Feuerstein a decadent breakfast by adding fresh chopped apples and homemade granola.

7. Raw Flower Coconut Sundae

This sundae consists of vanilla coconut ice cream, a salted chocolate sauce, pine nuts, flowers, and a few dates filled with fresh cashew butter. Seriously, I made the cashew butter while the ice cream was thawing. Needless to SAY – it was delicious! I shouldn’t have eaten all of it but… well, you know me.

8. Semolina Coconut Cake

My experiments and use of Semolina in baking are on. Having baked breads with semolina, it is now cakes. Semolina gives lovely textures to cakes too. The Semolina coconut cake or Basbousa that was baked last week had a soft crumb and great texture. This Semolina Coconut Cake by Namita Tiwari is drenched in sweet syrup, this cake is very easy to make.
