This Mousse au Chocolat by Hannah Sunderani is thick, rich, and velvety. The recipe uses silken tofu, which is a stellar ingredient in desserts as it gives a creamy and luscious texture. Its mild flavour also allows for other ingredients to shine—in this recipe, chocolate! This is one of my husband, Mitch’s, all-time favourite desserts and one that convinced him, in those early transition days, that we could still enjoy our favourite recipes on a plant-based diet.

2. Tofu Madras

This super-spicy Madras features meaty tofu “steaks” simmered in a spicy tomato and onion broth. There’s a fair whack of heat in these Tofu Madras by Henry Firth and Ian Theasby with one with two teaspoons of chili powder, which we love, but keep some plant-based yogurt on hand to mellow it out if you prefer your curry on the milder side. It will all be ready in less than 35 minutes. Plus, you can substitute the vegetables suggested for any vegetables you have on hand. It’s a great way to give life to older vegetables at the end of the week. You can also make this Tofu Broccoli Stir Fry by Caroline Doucet on a Sunday and enjoy the leftovers throughout the week!

This Blueberry White Chocolate Ice Cream by Lilia Jankowska is a simple, coconut-based ice cream is filled with a deep aroma of lime which is balanced by the gentle sweetness and perfume of fresh blueberries.
