1. Oven-Roasted Ratatouille with Flageolet Beans
This Oven-Roasted Ratatouille with Flageolet Beans by Anita Bean is my go-to midweek dish when courgettes are plentiful and in season. It could not be easier to make – you simply add all the ingredients to a roasting tin and let the oven do the work. It is packed with beta-carotene, vitamin C, folate and fibre. I have used flageolet beans (small, immature kidney beans, widely available from supermarkets) in this dish to boost the protein content but you can easily substitute with chickpeas or any other type of canned beans. You can also substitute fresh tomatoes for canned when in season and add a pinch of dried chilli flakes if you like heat.
2. No-Tuna Chickpea Salad Sandwich
This No-Tuna Chickpea Salad Sandwich by Andrea Soranidis has “eat me” written all over it! It’s a fantastic lunchbox option (but is great for breakfast too!), conveniently packed with plant- based protein and it comes together in just ten minutes. Definitely not to these delicious, savory veggie hand pies with a mildly spiced filling of carrots, cauliflower, peas, potatoes, onions, jalapeños, and tomatoes. These hand pies are quite filling, so consider these a quick, easy and delicious meal for two or a dinner for two days.
