Tindorā, also known as gilodā or ivy gourd, are slender, pale-green gourds that make one of my favorite childhood shāks. The Tindorā by Sheil Shukla is cooked until it’s just tender but retains some bite; then it’s stir-fried with a classic combination of spices. Tindorā can be found at Indian grocers (fresh tindorā cooks better than frozen), but if unavailable, fresh green beans (halved lengthwise) may be substituted. The crust is filled with a slightly tangy but sweet mixed berry compote and topped with a crunchy, caramelly oat crumble. Are you drooling yet? With a buttery and soft crust, perfectly sweet mixed berry compote, and crunchy oat crumble, these mixed berry crumble tarts are the ultimate spring/summer dessert. They are also both gluten-free and vegan. Top these bad boys with some vegan vanilla ice cream or coconut whipped cream. Instead of mixed berries, they would also be good with frozen blueberries, raspberries, rhubarb, or other fruits.

3. Coconut Chia Pudding

Despite their tiny size, chia seeds are a nutritional powerhouse: they are packed with omega-3 fatty acids, antioxidants, calcium, fiber, and protein. When mixed with liquid, the fiber-packed seeds resemble tapioca pudding, but with many more nutritional benefits, including boosting energy, aiding digestion, and stabilizing blood sugar. It can be made from a variety of hot peppers, such as Scotch bonnet, Caribbean red, ghost peppers, and more! If you choose to make a small batch, lemon or lime juice can be substituted for vinegar.

Then I decided to make something that somehow had escaped my attention. With all the vegan burgers I’ve made – and I’ve made a lot – I had never made a tofu burger. OMG! These Double Black Bean Tofu Cheeseburgers by Rhea Parsons were so good. They tasted more like beefy burgers than bean burgers. The texture was crispy on the outside because I really let them build up a crust while cooking them but they were tender inside and just so delicious.

8. Honeydew Sorbet With Lime and Mint

What’s fab about this Honeydew Sorbet With Lime and Mint by Gabrielle St. Claire, is everything! Like most sorbets, it packs minimal ingredients, is quick, easy, affordable, perf for summer, great for entertaining, you can skip the agave if you like, you can add in coconut cream to make an ice cream, but not matter what you do with this combo, you’re going to love this flavor combo!!
