Ingredients
- 500 g
cranberries, fresh or frozen
- 100 g
caster sugar
Pared zest 1 orange
- 100 ml
gin, see intro
- 2
rosemary sprigs
Directions
- Step 1Put all the ingredients in a medium pan. Bring to the boil, then simmer, stirring occasionally, for 10-15min, or until most of the berries have burst and the liquid has thickened slightly. Remove rosemary sprigs.
- Step 2Empty into a heatproof serving bowl and cool completely (the sauce will thicken further on cooling).
- Step 3Chill until needed.
