The beauty of winter meals lies in the fresh greens that make the dining spread even more healthy and delicious. According to experts, seasonal greens not only boost the immune system, the rich fibre content also soothes the digestive system in this season, when we often indulge in fat-rich diets. Today, we will tell you about some really easy and simple spinach recipes that you can enjoy during winters. For the unversed, spinach is rich in fibre and other essential nutrients and minerals that make it a superfood. Try these easy recipes and enjoy!

Boil 15-20 spinach leaves and allow them to cool down. Blend them along with 2-3 garlic cloves, ½ inch ginger, 1 green chilli, and 2 ice cubes to a fine puree. Knead soft dough using the puree and 1 cup whole wheat flour. Roll out parathas and cook on a tawa using ghee or oil. Your spinach paratha is ready. (Image: istock)

Clean and wash 10-12 spinach leaves and finely chop them. Add ghee or oil in a pan, add some cumin seeds and 1 chopped green chilli. Add the chopped spinach leaves and sauté them till the water evaporates and the rawness of leaves goes away. Add them to a bowl of curd along with 1 tbps sugar, salt to taste, ½ tsp black salt, 1 tsp chaat masala, 1 tsp roasted cumin powder, 1/s tsp red chilli powder and mix all the ingredients. 04/8​Spinach and Corn Sandwich

Boil 5-7 spinach leaves and place them in ice water. In the meantime boil the corns as well and set them aside. In a mixing bowl, add the leaves and corn, along with 2 tbsp mayonnaise, 1 tsp oregano, 1 tsp chilli flakes, salt and pepper to taste, and 1 tbsp Parmesan cheese. Mix well and spread the mixture on a bread slice. Cover with another slice and place in an electric sandwich maker or on a gas stove one. Serve hot with ketchup. (Image: istock)

06/8Spinach & Walnut Soup

Heat a pan, add 2 tbsp olive oil, 3-5 garlic cloves and 2 green chillies, sauté them and then add clean and washed spinach leaves and some crushed walnuts. Saute them on a low flame for 10 minutes. Add salt and pepper to taste. Mix well and allow the mixture to cool down. Blend them together and pour in the same pan. Add some water and cook till the mixture reaches desired consistency. Mix 4 tbsp gram flour, ½ tsp carom seeds, 1 tsp turmeric powder, 1 tsp chaat masala, and salt & pepper to taste. Make a thick batter using enough water. Dip the washed and cleaned spinach leaves in gram flour batter and coat them well. Deep fry them in hot oil till they turn golden brown and crisp. Your homemade spinach fritters are ready.

Pan-fry the paneer cubes and set them aside. In the same pan, add 2 tbsp mustard oil, 1 tsp cumin seeds, 3-5 garlic cloves, 2 green chilli and 1 inch ginger. Add onion and tomato puree and cook for 5-7 minutes. Next, add 1 cup spinach puree. Mix well, and add salt and sauté till the water evaporates and puree is cooked evenly. Add pan-fried paneer cubes and 2 tbsp fresh cream. Cook for 5 minutes and serve hot with a garnish of fresh cream and butter. (Image: istock)
