ROANOKE, Va. (WDBJ) - February is National Pancake Month, and we have a few recipes to share.

Mary Rapoport with the Virginia Egg Council joined Here @ Home to show how to make a few different versions of the delicious breakfast treat. She recommends making a larger batch, then freeze, and re-heat in the microwave, or toast in the toaster for a quick weekday morning treat.

Here are three healthier versions of the traditional favorite:

Oatmeal Pancakes

The oatmeal adds fiber; the honey offers natural sweetness; and the eggs add protein.

2 cups dry oats

4 eggs

2/3 cup plain yogurt

1 1/3 Tablespoon vanilla extract

¼ cup honey

½ tsp baking soda

Avocado oil to grease skillet

Grind oats in food processor. Mix in the eggs, yogurt, vanilla, honey and baking soda until smooth. Preheat non-stick skillet over low – medium heat. Coat with oil. Pour on ¼ cup for each, leaving room to flip easily. When edges look done, flip carefully. Cook the remaining side. Go easy on the butter and syrup for a healthier option. Makes 8 pancakes

Banana Pancakes (Blueberries, optional)

Sweetened with bananas, these light cakes use just a dab of flour and get a nice protein punch from the eggs.

2 medium to large ripe bananas*

4 eggs

½ cup whole wheat/buckwheat/almond or 2/3 cup oat flour

½ tsp cinnamon, ¼ tsp salt

½ cup small blueberries

Avocado oil

Mash bananas in medium bowl until smooth. Add eggs and whisk until well combined. Add flour, cinnamon and salt and stir in berries, if using. Preheat skillet to medium heat or electric griddle to 350◦. Sizzle a drop of water and it’s hot enough, then lightly oil and add ¼ cupsful of batter to hot skillet, leaving room to flip. Once bubbles form, flip and cook on the other side. Serve immediately with fruit or a dab of syrup or butter. *Ripe bananas that are soft and have several brown spots are sweeter and blend more easily. The WW diet makes these with 3 eggs, no flour, some baking powder and 2 bananas – no flour! Makes 8

Dutch Baby Pancake

These are always fun and an out of the ordinary pancake!

2 eggs

¼ cup flour of choice

¼ cup 2% milk

2 packets Stevia sweetener or 1 1/3 T sugar

½ tsp. vanilla, almond or butter extract

¼ tsp. salt

Avocado spray oil

Serve with yogurt, fresh berries, cooked apples, a dash of powdered sugar

Mix all ingredients together (except oil) in a small bowl. Preheat oven to 425◦F. Place 8″ skillet in oven and allow it to get very hot. Then spray with spray oil and pour in batter. Place back in oven and bake for 15-20 minutes until batter has risen and is cooked. Serve, filled with berries and yogurt and a sprinkle of powdered sugar. Serves 2
