Independence Day 2023: The special time of the year is here. Every year, Independence Day is celebrated with a whole lot of grandeur and pomp all over the country. The tricolour is hoisted in the morning and songs and stories of pride for our freedom fighters are sung. The freedom fighters are remembered for their contributions to the freedom movement. In schools, offices and other institutions, Independence Day is celebrated. People deck up in tricolour shades and celebrate the day. On this special day, it is mandatory to have tasty snacks and breakfast dishes to start the day on the right note.
We have curated two easy and fun recipes for breakfast and snacks that will satisfy the tastebuds and add more fun to the special day.

Bajra Uttapam
Ingredients:
¾ cup pearl millet (bajra) flour
½ cup semolina (suji)
1 cup yogurt
1 medium onion, finely chopped
2 tablespoons finely chopped green capsicum
1 teaspoon finely chopped ginger
2 green chillies, finely chopped
Salt to taste
1 teaspoon mustard seeds
1 teaspoon cumin seeds (jeera)
6-8 curry leaves
1 teaspoon baking soda
Oil as required
Method:
In a bowl, mix semolina, yoghurt and pearl millet flour. Then add onion, capsicum, ginger, green chillies, salt, mustard seeds and cumin seeds with some water. Add curry leaves and baking soda and mix everything together and let it rest for five minutes. Then on a tawa, heat oil, take a ladleful of the batter and spread into an uttapam and cook evenly. Serve with green coconut chutney.
Schezwan Cheese Fritters
Ingredients:
1 cup grated processed cheese
2 tsps schezwan chutney
1 cup chopped onions
½ cup refined flour (maida)
1 tbsp chopped garlic
¼ cup chopped spring onions
1 tsp baking soda Buttermilk, as required
Oil to deep fry
Red chilli sauce, as required
A little fresh parsley
Method:
On a bowl, mix cheese, refined flour, baking soda, onions, spring onions, garlic, schezwan chutney and sufficient buttermilk, salt and make a dough. Shape the dough into quenelles and put in heated oil and deep fry till golden. Garnish with little parsley and serve with red chilli sauce.
