I love to eat a mostly plant-based diet, but I made an exception for this delicious cauliflower casserole recipe.

To make this easy baked cauliflower recipe you need a few simple ingredients. Here is your shopping list: bacon, cauliflower, salt and black pepper (learn about the health benefits of black pepper), cheese, green onions and crushed red pepper flakes.

Ingredients

  • 3 slices bacon
  • 1 head cauliflower (about 2 pounds), cut into bite-size pieces
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 2/3 cup sour cream
  • 1 1/4 cups shredded cheese (divided)
  • 4 green onions, sliced (divided)
  • crushed red pepper flakes (optional)

  • You can use any cheese you like. I used a combination of mozzarella, Swiss and Parmesan cheeses. A bolder-tasting cheese works great in this recipe.
  • I used turkey bacon, but because it lacks fat, I added an extra tablespoon of olive oil while the bacon cooked to create the fat to add to the cauliflower. Real bacon works best!

Here's how to make it:

  1. Cook the bacon in a skillet over medium heat until crisp. Remove and place on a paper towel but keep the drippings in the pan. Break the bacon into pieces.

  2. Put the cauliflower, salt, pepper and bacon drippings into a 13x9-inch baking pan. Toss. Bake in a preheated 425-degree F oven for 35 to 40 minutes, stirring halfway through cooking time.
  3. While the cauliflower cooks, combine the sour cream, 1 cup of cheese and half the green onions in a medium bowl. Use a fork to combine and set aside.
  4. When the cauliflower is tender, remove from oven and stir in the cheese and sour cream mixture. Top with the remaining 1/4 cup cheese and return to the oven for 5 to 7 minutes, or until the cheese is melted.
  5. Remove the casserole from the oven and top with the bacon, crushed red pepper flakes, if desired, and remaining green onions.
