Lobster bisque is a perfect addition to your New Year’s Eve “shell-ebration.” First, separate the meat from each lobster tail’s shell. Next, add the shells to a pot with cold water, thyme, tarragon and a bay leaf. Then let it simmer for 30 minutes. Make a broth from diced onion, carrots, celery, melted butter, minced garlic, tomato paste, flour and Sherry wine. Strain the lobster stock into the broth.
