Five-Spiced Tofu with Brussels Sprouts and Thai Basil Black Pepper
This tofu dish is one of nine courses Chef Peng S. Looi created for a family reunion-style meal, inspired by the Chinese dishes in Malaysia. The Chinese traditionally celebrate the Lunar New Year with an extravagant multi-course feast served family-style, but Chef Looi plated the dishes individually in light of 2021’s pandemic restrictions.

Tofu Breakfast Sandwich
Change up the usual egg-filled breakfast sandwich with a vegan alternative—tofu. Chef Kerri Rush creates a patty that closely resembles a traditional omelet by blending the tofu with soymilk, chick pea flour and spices. It’s cooked, then layered on a toasted English muffin with spinach and tomato and topped with a vegan sauce made with sweet potatoes, silken tofu and cashews for a nutrient-dense breakfast to go.
