Roasting some vegetables is perhaps the simplest and healthiest way to create a side for any dinner. The right vegetable can go along with basically any dinner from lobster to scrambled eggs! Cauliflower is one of our favorites to roast because, flavor-wise, it is very much a blank canvas. You can keep it simple with just salt and pepper or go nuts with some kind of custom spice blend.

This recipe adds just a tweak of color and zestiness by using Old Bay seasoning. It's kind of like putting Old Bay on popcorn only healthier and more delicious. A 425ºF oven is the ideal roasting temperature for most veg (see our Brussels sprouts and green beans recipes) to give a bit of browning and a whole lot of flavor.

  1. Preheat oven to 425ºF. In a large bowl, combine cauliflower, olive oil, Old Bay, salt and black pepper.
  2. Add cauliflower to a sheet tray and distribute into a single layer. Roast the cauliflower for 25 to 30 minutes, tossing halfway through, until the florets have browned on the edges. Transfer to a plate or bowl and serve.
