Clinical nutritionist Sarah Di Lorenzo shares her recipes to create a Mexican fiesta that’s both delicious and good for you.

Easy chilli con carne with cauliflower rice

Serves 4

Ingredients

  • 1 chopped brown onion
  • 400g of lean beef mince
  • 1/2 teaspoon of chilli powder
  • 400g can of red kidney beans drained and rinse well

To serve

  • 1/2 cup of fresh Coriander
  • 4 tbs of Greek yoghurt

Salsa

  • 2 cups of chopped cherry tomatoes
  • 1/2 red onion finely chopped
  • 2 cloves of garlic chopped
  • 1 cayenne chilli deseeded and chopped
  • 1/2 tsp of cumin
  • 1 tbs of maple syrup
  • 1/2 cup of chopped fresh coriander

Method

  1. For the chilli, cook the onion in a fry pan and add mince and chilli powder, stir in the kidney beans and salsa then cook for 20 minutes.
  2. Serve on a bed of cauliflower rice and top with fresh coriander and Greek yoghurt.
  3. Note to make the cauliflower rice, add 1 cauliflower to a food processor or use a cheese grater to resemble rice. Then add to a fry pan in 1 tablespoon of olive oil and heat for 5 - 8 minutes.

Fajita bowl

Serves 4

Ingredients

  • Juice of 1 lime
  • 1 tbs of olive oil
  • 1 clove of garlic minced
  • 1 tsp of ground chilli
  • 1 tsp of cumin
  • 2 tbs of freshly chopped coriander
  • 4 chicken thigh fillets
  • 2 capsicums cut into strips

For the bowl

  • 2 cups of chopped lettuces
  • 200g of corn kernels
  • 200g of washed black beans
  • 1/2 red onion chopped
  • 1 avocado in slices

Dressing

  • 2 tbs of olive oil
  • Juice of 1 lime
  • 1 tbs of chopped coriander
  • 1 clove of garlic crushed
  • 1 tsp of honey
  • 1/2 tsp of cumin
  • Chilli flakes (optional)

Serve with 2 cups of cooked rice of choice

Method

  1. Add the lime juice, chicken, oil, garlic, cumin, salt, chilli and coriander and marinate for 1/2 hour.
  2. Heat a fry pan and add 1 tsp of olive oil. Sear the chicken and cook until cooked through then set aside. Then add the capsicum to the pan and cook, season with salt and pepper.
  3. Add the dressing ingredients to a jar and shake well.
  4. Assemble the bowl with the rice lettuce, beans, corn, onion and onion into 4 bowls or 1 big bowl. Slice the chicken.
  5. Top with avocado then dressing.

Healthy nachos with turkey mince

Serves 4 - 6

Ingredients

  • 1 tbs of olive oil
  • 1 chopped brown onion
  • 500g of turkey mince
  • 1 tsp of ground cumin
  • 2 tsp of ground coriander
  • 1/2 tsp of ground chilli
  • 1/4 litre of beef stock
  • 400g can red kidney beans
  • 2 tbs of tomato paste
  • 1 cup of Greek yoghurt
  • 1 garlic clove
  • 1 tsp finely grated lime rind
  • Juice of one lime
  • 1 chopped finely avocado
  • 2 tomatoes chopped
  • 1/2 cup of chopped fresh coriander
  • 2/3 cup of grated mozzarella
  • 8 wholegrain tortillas

Method

  1. Preheat the oven to 200C. Spray wholegrain tortillas with oil and bake until golden brown then cool.
  2. Heat the oil in a pan and cook the onion until transparent, add the turkey and cook until brown. Add then add the cumin, coriander and chilli, stir in the beef stock, beans and tomato paste then cook for 10 minutes.
  3. Combine the yoghurt, garlic, rind and juice in a bowl then add the avocado, tomato and coriander in a bowl.
  4. Grab a platter and arrange the tortilla chips, then add the mince and then mozzarella, place under the grill until the cheese melts then add the avocado mix and top with the lime yoghurt.

Note - you can also purchase tortilla chips for more convenience.

Tacos with chicken mince

Ingredients

  • 400g of chicken mince
  • 1 tbs of olive oil
  • 2 shredded carrots
  • 1 zucchini
  • 8 soft shells or hard shells or lettuce leaves
  • 1/4 cup of chicken stock (water is fine if you don’t have stock handy)

Fillings

  • Cheese
  • Chopped lettuce
  • Chopped tomatoes
  • Avocado
  • Olives
  • Beans

Home made taco seasoning

  • 3 tbs of chilli powder
  • 2 tsp of ground cumin
  • 2 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of sea salt
  • 1/2 tsp of cayenne pepper

Sarah’s Salsa

  • 1 cup of chopped cherry tomatoes
  • 1/2 cup of chopped coriander
  • 1/2 red onion chopped
  • Juice of 1 lime
  • 1 avocado chopped

Method

  1. Grate the carrots and zucchini with a cheese grater. Add the chicken to a fry pan and cook through.
  2. Next add the shredded vegetables, chicken stock and taco seasoning and cook for 10 minutes.
  3. Fill your tacos with any of your favourite filings and salsa on the top.
