We’re loving the influx of new celebrity cookbooks this year, and Stephen and Evie Colbert’s recent book is no exception. The cookbook Does This Taste Funny?: Recipes Our Family Loves is on shelves nationwide, and to celebrate, the talk show host and his wife went on The Drew Barrymore Show to share recipes from its pages.

Drew Barrymore highlighted one particular recipe in the segment on her show: Stephen’s Kindergarten Soup. The soup is just like the first soup he ever created—yep, in kindergarten. We have to give young Colbert credit, as this bowl is packed with protein and fiber for a satisfying bite. Here’s why we—and Barrymore herself—love this soup.

This soup is loaded with veggies, including tomatoes, carrots, onions, celery, potatoes, green beans and peas. That’s a mouthful we can get behind! Not only will this array of vegetables make the pot extra colorful, but it means that each serving is bound to include a healthy amount of fiber, a nutrient that the majority of Americans don’t get enough of.

Another veggie added that wasn’t mentioned above is okra, which Stephen loves. Okra is a vegetable commonly used in Southern cuisine, but it’s also a good source of fiber and potassium. We love it in our own Shrimp & Okra Soup, so we’re sure its tender texture and earthy flavor is well balanced in the Kindergarten Soup.

Plus, there are two sources of protein in this soup: chuck roast and butter beans. We love the addition of beans as a plant-based protein source, making this a fulfilling bowl for lunch or dinnertime. And chuck roast is of course packed with protein and adds so much comfort to this meal.

Colbert notes that this recipe is great to customize with whatever veggies or proteins you have on hand already. And it’s also ideal for making ahead to reheat for easy meals throughout the week. Barrymore made this soup to share with her staff on the show, and while making it, she noted that it was “delicious.”

“It’s so colorful and happy,” she said in an Instagram post whipping up the soup.

This soup is peak comfort while being nutrient-packed, and we’re ready to try it ASAP. It reminds us of our own Hearty Vegetable Beef Stew, which EatingWell readers say is a “perfect Sunday meal."
