If your family is anything like mine, our Mexican food cravings do not stop on Taco Tuesday. We could have Burrito Wednesday and Enchilada Thursday and still not be satisfied. Okay, so that doesn't actually happen, but my point is we can't get enough of our favorite Mexican dishes.

With the new school year quickly approaching, many of us will once again be pulling our hair out when dinner time comes. Between sports, after-school activities and those PTA meetings, there will be many nights everyone in the family is eating at different times.

That's when your Crock Pot can be a life saver. Having something warm on the counter that each person can help themselves to makes life so much easier. Crock Pot chicken recipes are so popular, and this one only has five ingredients!

How To Make Salsa Chicken In The Crock Pot

This recipe is one of the easiest things you will ever make. It's literally dump, cook, eat. Technically there's some shredding in there too, but you get the point. Once you learn this recipe you can do so much with it!

Shredded chicken is flavored with taco seasoning and salsa to become the perfect filling for tacos, burritos, quesadillas, enchiladas, burrito bowls, or simply served over some cooked rice. My husband even suggested it would make a tasty sandwich too!

How Long To Cook Salsa Chicken In Crock Pot On High

For this recipe, I cooked my salsa chicken on low, but you could certainly speed up the process by cooking it on high. On low, we are looking at 6-8 hours, and mine was done after about 6. If you want to cook it on high, aim for 3-4 hours, but start checking after 3. My only warning about cooking on high is the chicken might dry out a little. I tend to always err on the side of caution and cook on low in the slow cooker whenever possible.

What To Eat With Crock Pot Salsa Chicken

For most Mexican dinners, my first two go-to side dishes are rice or chips with salsa. A big pot of pinto or black beans would be delish too, as would some restaurant-style refried beans. If you are serving salsa chicken over cooked rice, a steamed veggie or tossed salad would taste great too.

How To Make Crock Pot Salsa Chicken

1. Lightly grease your Crock Pot and lay the chicken in the bottom. Sprinkle with taco seasoning and pour 1 cup of salsa on top. Cook on low 6-8 hours, but start checking after 6.

2. When chicken is cooked through, shred with two forks. Stir in remaining salsa and cook about 10 minutes to warm through. Serve immediately or keep on warm setting until ready. Garnish with fresh parsley for a pop of color.

I served this with street taco-sized tortillas, lettuce, tomatoes and cheese as toppings and lime wedges on the side. The chicken has so much flavor you don't need any extra sauce, in my opinion.

Crock Pot Salsa Chicken might only have a few ingredients, but it's packed with flavor. It's also a great recipe to throw together as you are walking out the door in the morning and have dinner waiting on you when you get home. It would be a terrific dish to take to tailgating this fall and let everyone build their own tacos or burrito bowls. I know after you try it for the first time, you will be totally hooked like we are and your next Taco Tuesday plans are made!

  • If you like spicy, use hot salsa instead of mild.
  • Boneless thighs would work too. I would use about 8.
  • When chicken is cooked and shredded, you can leave on the warm setting until ready to serve.
  • After chicken is cooked, cool and freeze for future meals.
  • This could be used in tacos, quesadillas, burritos, enchiladas, burrito bowls, chimichangas, etc.
  • Suggested toppings: sliced black olives, pickled jalapeños, diced avocado, queso fresco cheese, shredded lettuce, diced tomatoes, Mexican blended cheese.
