Tahini is a Middle Eastern condiment made from hulled and toasted ground sesame. It is a main player in hummus recipes. The health benefits of tahini make this creamy condiment even more appealing. Tahini may help us absorb iron, control blood pressure, reduce blood clots and help prevent anemia, plus it's loaded with vitamins and minerals.
The dough for these moist tahini chocolate chip cookies needs to be cold before baking. Refrigerate the cookie dough at least one hour, but overnight is best if you have the time.

Cook Time: 12 to 15 minutes

Servings: Makes about 2 dozen
Ingredients
- 1 stick (1/2 cup) butter, softened
- 1/2 cup tahini
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 egg yolk
- 1 large egg
- 1 1/2 teaspoons vanilla
- 1 cup plus 2 tablespoons flour
- 3/4 teaspoon baking soda
- big pinch of sea salt
- 2 cups bittersweet, semisweet or dark chocolate chips
Here's how to make it:
- With an electric mixer, beat the butter, tahini, granulated sugar and brown sugar together until fluffy, about 2 minutes.
- Beat in the egg, egg yolk and vanilla.
- Whisk together the flour, baking soda and salt in a bowl. Slowly add the dry ingredients to the wet ingredients until just combined.
- Fold in the chocolate chips. Cover and refrigerate the dough at least 1 hour or overnight.
- Roll the dough into balls (about 1 1/2 inches) and put onto parchment paper-lined baking sheets. Bake in a preheated 325-degree F oven for about 12 to 15 minutes. Remove and cool.
