Sausage Kabobs
Ingredients:
?8-10 wooden skewers (soaked in water at least 30 minutes before cooking)
?1 medium orange bell pepper, cut into chunks
?1 medium zucchini, cut into 1 inch slices
?1 small red onion, cut into chunks
?8 ounces white whole mushrooms
?1 - 10 ounce package fully cooked sausage, cut into 1 inch pieces
?3 tablespoons olive oil
?1 tablespoon Italian seasoning
?1 teaspoon garlic powder
?Salt and pepper, to taste
Instructions:
1.Preheat grill to medium high heat (350 to 375F).
2.Alternate threading various vegetables and sausage between 4 skewers.
3.Combine olive oil, Italian seasoning, garlic powder, and salt and pepper in a small bowl. Generously brush olive oil mixture onto kabobs.
4.Add kabob skewers to grill and cook, turning occasionally until the vegetables and sausage start to brown, about 8-10 minutes.

Veggie-Filled Burgers
Patty Ingredients:
?16 ounces lean ground beef or plant-based meat
?1 - 15 ounce can black beans, rinsed and drained (about 1 1/2 cups)
?1 cup vegetables of your choice
?1 tablespoon olive oil
?1 teaspoon garlic powder
?1 teaspoon onion powder
?Freshly ground salt and black pepper, to taste
Instructions
1.Using a food processor or knife, pulse or chop vegetables until you have pea-size pieces. Then, add vegetables and all other ingredients to a large bowl. Using a fork, mash together until beans are slightly mashed and everything is combined.
2.Using your hands, form 8 - 1/2 inch thick patties. When ready to cook, heat grill and cook patties for 6 minutes each side, or until burgers reach an internal temperature of 165F.
3.Serve in a bun with any toppings of your choice.
