In our home, we’re big fans of breakfast any time of day. In fact, breakfast for dinner is one of our favorite meals. This fluffy pepper and spinach frittata recipe is an easy, delicious example of how we turned a few ingredients in our refrigerator into a nutritious meal. Frittatas are flexible like that: you can add any vegetables or proteins you like, and they cook up quick and delish.
This spinach and orange pepper frittata recipe is made with egg whites, so it’s better for you. Top it with shredded Parmesan if desired.

Ingredients
- 2 tablespoons extra virgin olive oil
- 2 cups fresh spinach
- 1 orange pepper, diced
- 1 teaspoon Italian seasoning blend (or your favorite seasoning)
- 2 cups egg whites
- 1/4 cup shredded Parmesan cheese, if desired
Here's how to make it:
- In a skillet, heat the olive oil on medium heat. Add the pepper and stir fry for a couple of minutes. Add spinach and stir until spinach wilts. Add the seasoning and stir to combine.
