If you are looking for a good post-workout meal with the right combination of macro-and micronutrients, then this Fermented Beet and Quinoa Bowl by Zuzana Fajkusova and Nikki Lefler is what you need! You will want to ferment the beets for 24 hours prior to assembling the bowl. Hoverer, if you are short on time or haven’t accounted for this step you can omit the fermentation and prepare the dish with freshly grated beets instead.

This vinaigrette is light and the blood orange juice gives it a tangy citrus flavor. This Blood Orange Vinaigrette Dressing by Desiree Rodriguez is also made with rice vinegar, garlic, dijon mustard, agave nectar and doesn’t contain any oil. Serve this vinaigrette over a simple salad filled with greens and your favorite vegetables.

This is not a traditional curry recipe, but instead inspired by the flavors of delicious Indian and Surinamese dishes. This Green Vegetable Curry by Anarki “AJ” Tjon Affo uses green bell pepper, peas, cilantro, and sugar snaps, but for an even greener curry you can add spinach or kale. The heat in this dish is mild, so if you like it spicy you can add a chilli pepper or another tablespoon of chili flakes. Serve with rice or your favorite grains.

Moist and sweet, this vegan peach upside down cake is scrumptious. This Peach Upside Down Cake by Fabio Gallo is delicious caramelized peaches on a fresh lemon vegan sponge. A upside down cake can be a little tricky, you want to make sure, the fruits are cooked, the sugar caramelized and the sponge is baked. Before reversing the cake, it has to rest for about 10 minutes, so the caramel can set but is still soft enough so the fruits won’t stick to the bottom.
