With the cold weather rolling in, is there anything quite like a big, comforting bowl of chili?
There are many great things about chili. Firstly, it is incredibly versatile. There are a few key ingredients, but there is also a lot of room for maneuver in terms of which veggies to add and what protein to use. Secondly, it doesn’t have to be this mind-blowing heat-fest. If you aren’t into spoonfuls of cayenne, that’s fine. You can turn the heat up and down accordingly.
Another great thing about chili is that is often packed with protein. There are usually tons of beans, lentils, or other plant-based protein goodies in a bowl of chili that will power you through the cold evenings. And, lastly, everyone knows that leftover chili is even better than the first round, so don’t be shy about making a gigantic pot to last you the week.
