This vegan take on Japanese katsu curry features crispy fried tofu served over a flavorful curry sauce. To make it, sauté onions, garlic and ginger in a pan. Then add in grated apple, tomato paste, vegan butter, flour and spices. Stir in vegetable stock and simmer until the mixture thickens. Then add in ketchup, soy sauce, agave and vegan Worcestershire sauce. Blend the mixture until smooth, and set it aside. Then coat the tofu in flour, non-dairy milk and breadcrumbs. Fry it until it is golden brown. Serve the tofu with the curry sauce and a side of rice.
If you love the flavor of garlic, this vegan chili garlic curry is for you! Start by blending up onions, garlic and green chilis into a paste. Fry the paste in a pan with a mix of dried spices, tomato paste, water and coconut milk. Then add red lentils and a pinch of salt, and simmer until the lentils soften. Garnish the curry with fresh coriander and enjoy!
This vegan butter chicken is so cozy! To make it, fry garlic and white onions in vegan butter. When the garlic softens, add in spices, canned diced tomatoes and non-dairy cream. Use an immersion blender to blend the sauce until it’s creamy. Then add more spices. Mix baked or fried tofu into the curry sauce, and serve it up!
